Celebrate Earth day with food!

Most of the people consume when they’re feeling under the weather. I hate it when I’m sick because I can’t enjoy the delicious and tasty flavors of the ingredients. This recipe is one of  the many soups that I love. I chose this recipe it’s easy to do, and the ingredients are all veggies. (except for noodles)

Vegan soup
About 8 servings

Ingredients
1 onion
3 cloves garlic
2-3 carrots
1 1/2 cups cabbage
2 cups broccoli
2 cups cauliflower
1 1/2 cups mushroom
1 1/2 cups corn (optional)
1/2 package of noodles (optional)
8 cups vegetable broth
Salt and pepper to taste

Directions
Prep veggies: mince garlic and dice onion, carrots and mushrooms. Roughly chop cabbage, and cut broccoli and cauliflower into small bite-sized pieces.
In a large stockpot over medium heat, saute onion for 5-7 minutes. Add garlic and cook for 30 seconds.
Add broth and all veggies.

Increase heat and bring to a boil.
Add the noodles.
When the noodles get soft, reduce heat, cover, and simmer for 20-30 minutes or until veggies get to a desired tenderness.

Vegetable soup freezes wonderfully! And please try to use fresh veggies, nothing from the frozen section of the supermarket.
